The Aztec believed that chocolate was a gift from the gods. The modern word chocolate is actually derived from the Aztec word xocolatl. Usually Mexican hot chocolate comes in round tablets that are ready to be mixed with hot milk. The round tablets are made of sugar, cocoa and cinnamon. In a 6-quart (or larger) slow cooker, combine whole milk, Abuelita chocolate, and semisweet chocolate chips. Let it sit for 10 minutes or until milk is warm enough to melt the chocolate. Once the milk is warm, stir occasionally until all the chocolate has melted into the milk. Please note that the Abuelita chocolate has a grainy texture and it may look like it has not dissolved completely, but it completely okay to have that grainy texture.

Mexican chocolate is sold in round disks (called tablets), with triangular markings (like pizza slices) to show where you can break it up. It has a noticeably grainy texture because it’s processed only to the “liquor” stage before it’s poured into the disk-shaped molds to cool and harden. Classically, it’s flavored with cinnamon and vanilla. To make this drink, the chocolate disk is broken into pieces, then just melted into a pot of hot milk. Grinde your nuts and spices. Place dry ingredients (ground pecans, almonds, and cinnamon) along with the cocoa powder and sugar in a small bowl and mix well. How to Make This Traditional Mexican Hot Chocolate Recipe

Abuelita is the more economical option of the three. Though it doesn’t include dairy in it’s ingredients list, it is made in a factory that processes dairy, eggs and wheat. Be sure to heat your milk slowly and gently over low heat, stirring regularly. This will help the other ingredients mix together and avoid burning the milk.

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, chili powder, cinnamon, and salt. Set aside.

Combine all ingredients in the bowl and mix until the mixture comes together. It will be fairly crumbly and dry at first, but will become smooth as it mixes. Let the milk simmer in a medium saucepan for about 10 minutes to bloom and dissolve the cinnamon and cayenne, if using. Try not to let the milk boil, which will make it bubble over.
